About this winery

In 1970, Aimé Guibert ventured into the hinterland of the Hérault region in search of a unique terroir and fell under the spell of an old farmhouse and its ancestral mill. Owned by the Daumas family, the estate is nestled in a magnificent valley crossed by the Gassac River. This historic site, notably marked by the Moulin de Gassac — a former water mill and a witness to the region’s agricultural past — became the birthplace of Mas de Daumas Gassac. Product notes

Planted on red clay-limestone soils rich in iron oxides, typical of the Haut-Languedoc, these well-drained and low-organic-matter soils encourage deep root systems and naturally limit yields, resulting in concentrated grapes. The vines, grown on terraced slopes sheltered by the mountains, benefit from a cool, well-ventilated microclimate that is unique to the region.

Production notes

The production of Mas de Daumas Gassac blanc is carried out with precision and great respect for the fruit. The harvest is done 100% by hand, allowing for careful selection of the grapes. The berries undergo a skin maceration for 5 to 7 days to extract maximum aroma and complexity. Fermentation takes place in stainless steel tanks, preserving the freshness and purity of the grape varieties. The vines are planted on calcareous gravels and white Lutetian limestone, which give the wine elegant minerality and vibrant tension.

Tasting notes

The nose opens instantly with delicate notes of almond blossom, pineapple pulp, lemongrass, orange, and summer meadow flowers. The palate follows with ripe citrus, mango, and peach, leading to a long, vibrant finish. Serve chilled at 12–14 °C. Ideal pairings include grilled fish, shellfish, Thai cuisine, fresh goat cheese, or citrus-marinated poultry.
