In 1970, Aimé Guibert ventured into the hinterland of the Hérault region in search of a unique terroir and fell under the spell of an old farmhouse and its ancestral mill. Owned by the Daumas family, the estate is nestled in a magnificent valley crossed by the Gassac River. This historic site, notably marked by the Moulin de Gassac — a former water mill and a witness to the region’s agricultural past — became the birthplace of Mas de Daumas Gassac. Product notes
Very strict choice of vines and poor terroirs with a strong personality. Limestone slopes dating from the Jurassic (150-300 m altitude) for the Syrah, limestone sandstone slopes and Rognacian marl for the Merlot. Vines between 20 and 30 years old.
Production notes
Mechanical harvest, over two days. Typical wine-making of the Médoc; de-stemming, slow maceration at a temperature of 28 ° C-33 ° C. Lack of filtration can result in a light deposit. Partial aging, 8-9 months in barrels of one to third wines.
Tasting notes
Velvet red, brown reflections. Elegant and melted notes of jammy fruit. Fineness of coffee and spices. Soft, charming and velvety tannins on the palate, toasted notes. Balanced finish, good persistence on the fruit. A round and fine wine. Perfect match with tapenade, tabbouleh, melon and country ham, veal blanquette, pan-fried foie gras, honey and coriander rack of pork.
