In 1970, Aimé Guibert ventured into the hinterland of the Hérault region in search of a unique terroir and fell under the spell of an old farmhouse and its ancestral mill. Owned by the Daumas family, the estate is nestled in a magnificent valley crossed by the Gassac River. Product notes
The Moulin de Gassac Pinot Noir 2024 comes from the hillsides of Cournonterral and Fabrègues in the Hérault region, where the vines are rooted in rich clay-limestone soils, typical of the Languedoc wine landscape. This terroir offers a balanced combination of limestone freshness and the water-retention capacity of clay, providing ideal conditions for the steady ripening of Pinot Noir. The controlled yield of 60 hl/ha helps preserve the expression of the soil and the varietal character.
Production notes
Harvested in early September, the grapes are picked 50% by hand and 50% by machine. The traditional vinification involves daily pump-overs and a 5 to 10-day maceration at moderate temperature to preserve the fruit’s expression. Aged mainly in stainless steel tanks (80%), with 20% in oak barrels, this process brings both freshness and complexity to the wine.
Tasting notes
Velvety red wine with brick-colored reflections, it reveals elegant and mellow notes of candied fruit, accompanied by a subtle finesse of coffee and spices. The palate is charming with soft, smooth tannins, highlighted by delicate toasted notes. The finish is balanced and persistent on the fruit, offering a wine that is both round and refined. Recommended serving temperature: 18 to 20°C (64 to 68°F). Perfect with tapenade, tabbouleh, melon and country ham, veal stew, seared foie gras, or honey and coriander pork rack.
