In 1970, Aimé Guibert ventured into the hinterland of the Hérault region in search of a unique terroir and fell under the spell of an old farmhouse and its ancestral mill. Owned by the Daumas family, the estate is nestled in a magnificent valley crossed by the Gassac River. This historic site, notably marked by the Moulin de Gassac — a former water mill and a witness to the region’s agricultural past — became the birthplace of Mas de Daumas Gassac. Product notes
The Moulin de Gassac Tèrra Blanc comes from organically farmed vines grown on clay-limestone hillsides in the foothills of the Cévennes, within the Languedoc AOP. The Mediterranean climate, tempered by maritime influence, and the well-drained soils allow for balanced grape ripening while preserving freshness and aromatic expression.
Production notes
Harvesting is done early in the morning to preserve the freshness of the grapes. The grape varieties are picked separately at optimal ripeness, then vinified in stainless steel tanks at low temperature. This approach helps retain the wine’s aromatic purity and natural freshness, while highlighting the balance and finesse typical of Languedoc white wines.
Tasting notes
Moulin de Gassac Tèrra Blanc stands out with its pale yellow color and bright reflections. On the nose, it reveals expressive aromas of white flowers, lemon, peach, and exotic fruits. The palate is lively, balanced, and refreshing, with good tension and a fresh, fruity finish. Its light texture and subtle minerality make it a very enjoyable wine to drink young. Served between 8 and 10 °C, it pairs beautifully with seafood, oysters, grilled fish, mixed salads, light Asian dishes, or fresh goat cheese.
