Product notes
Mainly clay and limestone soils, ensuring ideal water retention. The vines are 30-32 years old.
Production notes
Manual harvest from mid-September. The grapes are crushed and destemmed immediately after picking, then left on the skins in vats for 7-8 days to slowly release all the noble components. Fermentation ends with racking. The wine is bottled when it has acquired a perfect balance, late in the spring following the vintage, after 6 months of oak.
Tasting notes
Ruby red with purplish reflections; intense, delicate and winey nose; sweet and dry taste with a nice almond vein. Serve with pasta, dishes with tasty sauces, fresh cheeses.
