Product notes
Average age of the vines: 25 years
Production notes
Manual harvest. The grapes are transported to the cellar by small capacity trailers in order to preserve their integrity. Fermentation in stainless steel vats at 29 to 30 ° C for 8 days. 7-day maceration with frequent pumping over to optimize extraction. Aging in American oak barrels for 20 months. The wine finally reaches its fullness after 24 months in the bottle.
Tasting notes
Ruby red color. The bouquet has a strong fruity character, mixed with aromas from aging, as well as notes of coconut, toffee and attractive scents of garrigue. The powerful attack gives way to a feeling of volume and smoothness that leads to a lingering finish. Perfectly pairs with roast lamb, lamb chops and shepherd's pie. Serve between 16 to 18 ° C.
