About this winery

Their mission since 1927, has been to be faithful to their claim “BEING FIRST”, as an attitude of constant improvement with the sole aim of elaborating the best wine. Protos, true to its roots and keeping up with an ever evolving industry, builds a new state of the art winery in 2008 in Peñafiel. Blending together the know how of their long history with the new technologies that help them continue to make better and more sustainable wines.

Product notes

To celebrate its 90th anniversary, Protos has rediscovered its very first label to cover this unique cuvée. The use of indigenous yeasts allowed the true expression of tinto fino at Protos. Clayey soils with chalky concretions. Average age of the vines: Over 50 years. Some plots are the oldest in Ribera del Duero.

Production notes

Manual harvest in small boxes of 20 kg. The grapes are stored in a cool place and the bunches are sorted by hand, on a sorting table, twice. Cold pre-fermentation maceration to extract the most delicate aromas. Alcoholic fermentation is carried out in 15,000L stainless steel tanks at a controlled temperature of 25 ° C, with several pumping-over each day. Aging 16 months in French oak barrels, then one year in bottle.

Tasting notes

Intense, complex and elegant nose showing a wide variety of aromas of black fruits (plum), with toasted and vanilla notes, well integrated with tertiary aromas (caramel and liquorice). On the palate, its persistence, roundness and balance reveal a top-of-the-range wine that will continue to improve for a long time in the bottle. Ideal with rice, pasta, chicken and poultry in general, veal, mushrooms, stewed meats and mild cheeses.
