Production notes
Harvest late September to early October. Manual with rigorous selection of grapes. Harvest at full maturity, in order to obtain a high sugar level and a good level of alcohol. - According to an ancient Italian tradition, the corvina is subjected to rack drying, a process known as "apassimento", before being added to the merlot must. This brings a lot of intensity and complexity that allows it to compete with wines that are twice as expensive. The skins remain in contact with the must for a long time in order to extract the flavor and obtain the characteristic color. Traditional red wine making, at controlled temperature varying from 25 to 27 ° C. - Aging under oak.
Tasting notes
Intense purple robe, which evolves towards amber over time. Notes of ripe fruit, such as plum and grapes. Its aging in oak barrels gives it pleasant notes of spices and vanilla. It is a very structured wine thanks to its high alcohol content and its good balance between its soft tannins and its acidity. - It's a great match with grilled or roasted meats. Excellent with mature firm cheeses. - Serving temperature: 18 to 20 ° C.
