Production notes
The harvest are made in the first half of September. During vinification, the must is separated from the lees to prevent it from taking on a red color. After a light press, the must ferments for 8 to 12 days at low temperature (between 15 and 17 ° C) in stainless steel tanks. The wine is then stored in special stainless steel tanks until bottled.
Tasting notes

Ideal with fish and seafood of all kinds, from shellfish and shrimp entrees to fish soups, including risottos and grilled fish. Excellent with poultry and grilled vegetables.
