About this winery
Château des Charmes was founded in 1978 by Paul Bosc, the fifth generation of French winegrowers. When he arrived in the Niagara region in the sixties with his young family, Paul already knew that the only way to guarantee the quality of the wine was to plant his own vines. Product notes
Sustainable agriculture in the vines, without herbicides. The cellars are insulated according to geothermal and self-sufficiency principles.
Production notes
Mechanical harvest. Traditional Burgundy fermentation. Aging in barrels of second wine (20%), old oak (40%) and stainless steel (40%).
Tasting notes
This Pinot Noir is a delicate, nuanced and balanced wine with silky tannins, typical of cool climates. On the nose, it recalls strawberries and violets with a hint of mushrooms. In the mouth, the tannins are well integrated, giving the wine structure and depth. The classic Bourguignon pairing of Pinot Noir and lamb can travel all the way to Ontario, where several lamb farms are established. A perfect match will be a lamb burger with caramelized onions.
