Production notes

Manual harvest during the morning hours. De-stemming and pressing of the bunches. - Before the winemaking process, the grapes are left to macerate for five to six days at 6 ° C. Fermentation takes place at a temperature not exceeding 28 ° C, with constant pumping and shedding. Once fermentation is complete, maceration continues for 25 to 30 days to obtain a wine with a powerful structure and character. - The wine is aged in barrels, 70% French oak and 30% American oak, for fourteen months.

Tasting notes

Intense bunch of fruit with hints of spices, toast and cocoa. On the palate, it is balanced, supple and long. - Pairings with roast chicken, pork chops, roast beef, meatloaf. - Service temperature: 18 to 20 ° C.
