Product notes

Sloping, loamy and very stony soils. 500-700m above sea level.

Production notes

Manual harvest during the morning hours. De-stemming and pressing of the bunches. Before the vinification process, the grapes are left to macerate for 5-6 days at 6 ° C. Fermentation takes place at a temperature below 28 ° C, with constant pumping and unballasting. Once the fermentation is complete, the maceration continues for 25 to 30 days, in order to obtain a wine with a strong structure and character. Aging in barrels, 70% French oak and 30% American oak, for 14 months.

Tasting notes

Medium ruby ​​red color with a garnet tinge. The nose is expressive with notes of strawberry, violet and liquorice. Well balanced, fluid and smooth with a fruity exuberance. Excellent with roast chicken, pork chops, roast beef and meatloaf with mashed potatoes.
