Product notes
Loam of sandy clay mixed with pebbles, at an altitude ranging from 600 to 800 meters. Continental climate with cold winters and very hot summers.
Production notes
Manual harvest during the morning hours. The grapes are destemmed and crushed. Fermentation 7-10 days in stainless steel tanks at controlled temperature. 10-15 days post-fermentation maceration. Malolactic fermentation. Aging 6 months in American and French oak barrels. The wine settles naturally during this passage in barrels. Aging 18 months in bottle.
Tasting notes
Intense ruby color with garnet reflections. Nose with notes of blueberries, raspberries, cloves and smoke. Supple and well-balanced wine with flavors of raspberry and crushed red pepper seeds on the palate. Ideal pairing of pork tenderloin in a herb crust, bacon quiche or Mexican cuisine.
