Production notes
Harvest: Manual harvest, during the morning hours. Vinification: The grapes are destemmed and crushed. Fermentation lasts seven to ten days and is carried out in stainless steel tanks at controlled temperature. Ten to fifteen day post-fermentation maceration. Malolactic fermentation. Aging: Six months in barrels: American and French oak in the case of tempranillo, American oak only for the other grape varieties. The wine settles naturally during this passage in barrels. Then come 18 months of aging in bottle.
Tasting notes
Tasting notes: Intense ruby color with garnet reflections. Nose with notes of blueberry, raspberry, clove and smoke. Supple and well-balanced wine with flavors of raspberry and crushed red pepper seeds on the palate. Wine and food pairing: Pork tenderloin in herb crust, bacon quiche or Mexican cuisine.
