Production notes

Manual harvest in early October. - The grapes are then crushed and completely destemmed. Vinification at controlled temperature, with pumping over and load shedding. Only drop wine is used. Malolactic fermentation. - Aging for four months in French oak barrels.

Tasting notes

Deep ruby ​​color. Intense, smoky and spicy nose with aromas of thyme, paprika and cloves. Fruity notes of blackberry and cherry hide under the dominant aromas. It is medium bodied and offers intense flavors of raspberry and cinnamon. - Ideal pairing with smoked sausages, ratatouille, spicy chicken or pork dishes and Indian cuisine. - Serving temperature: 15 to 17 ° C.
