Production notes
Harvest: Manual harvest during the morning hours. First half of September. Vinification: The grapes are destemmed and crushed. Fermentation in stainless steel tanks for seven to ten days at a controlled temperature with selected yeasts. Post-fermentation maceration for 20 to 25 days. The wine is racked by gravity. Malolactic fermentation. Aging: One year in American oak barrels. During this barrel passage, the wine settles naturally before being bottled, where it will evolve another two years before marketing.
Tasting notes
Tasting notes: A medium ruby red with garnet reflections. The nose is expressive with notes of strawberry, violet and licorice. On the palate, it is elegant and balanced, with fruity exuberance. Wine and food pairings: Aged cheeses, roasted meats and game. Uncork one hour before serving.
