Production notes

Harvest: Manual harvest during the morning hours. First half of September. Vinification: The grapes are destemmed and crushed. Fermentation in stainless steel tanks for seven to ten days at a controlled temperature with selected yeasts. Post-fermentation maceration for 20 to 25 days. The wine is racked by gravity. Malolactic fermentation. Aging: One year in American oak barrels. During this barrel passage, the wine settles naturally before being bottled, where it will evolve another two years before marketing.

Tasting notes

Tasting notes: A medium ruby ​​red with garnet reflections. The nose is expressive with notes of strawberry, violet and licorice. On the palate, it is elegant and balanced, with fruity exuberance. Wine and food pairings: Aged cheeses, roasted meats and game. Uncork one hour before serving.
