Product notes
Clay soils with pebbles in the upper layers. Altitude of 600 to 800 meters. Continental climate with cold winters and very hot summers.
Production notes
Harvested by hand in the morning hours at the beginning of September. The grapes are destemmed and crushed. Fermentation in stainless steel vats for seven to ten days at controlled temperature with selected yeasts. 20 to 25 days post fermentation maceration. The wine is drawn off by gravity. Malolactic fermentation. Aging for 1 year in American oak barrels. During this time in barrels, the wine decants naturally before being bottled, where it will evolve for another 2 years before marketing.
Tasting notes
A medium ruby red with garnet reflections. The nose is expressive with notes of strawberry, violet and liquorice. On the palate, it is elegant and balanced, with a fruity exuberance. Will accompany mature cheeses, roasted meats and game. Uncork one hour before serving.
