About this winery

Mer Soleil began thirty years ago with a drive from the Napa Valley down to the Santa Lucia Highlands in search of the best land to plant Chardonnay. The Wagner Family (Caymus vineyards) put down roots in the region, drawn in by its down-to-earth vibe, rich farming history and weather that could not be more ideal for growing Chardonnay and Pinot Noir.

Product notes

Without exposure to oak and made in neutral containers, Silver is directly shaped by the perfect growing conditions of Monterey County, showcasing the true essence of this grape.

Production notes

Harvests in September and October. Blend of 50% Chardonnay fermented in concrete tanks and 50% in stainless steel tanks. The concrete brings a honeyed, almost truffle character. Aging for 5 to 6 months in stainless steel and concrete vats, porous to allow the wine to breathe as much as possible.

Tasting notes

The color of honeysuckle, this wine presents creamy citrus scents, reminiscent of meringue and lemon. The freshness of the nose evokes the minerality of wet granite encountered while hiking. The palate is round, infused with flavors of apricot, Meyer lemon and the crunch of peach. The initial fullness on the palate tapers to lively acidity on the finish, a lingering invitation to the next sip.
