Soil and terroir: Schist. Average age of the vines: 25 to 30 years.
Production notes
Manual harvest, around mid-September, in 20 kg boxes. - The berries are then sorted with great care for vinification, destemmed, gently trodden, then transported by gravity in the fermentation tanks. The fermentation and maceration temperature (with pumping and pumping over) is closely monitored and adjusted specifically for each tank, so that each plot can express its own personality. - Aging six months in 400 liter and 225 liter barrels.
Tasting notes
The aromas of rock rose and thyme, as well as pine forest scents, express the Mediterranean climate in which this wine was grown. Subtle rose fragrance, characteristic of the Touriga Nacional is also detectable with some undertones of dark chocolate. On the palate the texture is full and substantial with brooding, dark plum flavours and peppery tannins reflecting the wine’s structure and balance. Excellent with a wide variety of spicy international dishes as well as simple dishes like pasta and tapas.
