About this winery

Their mission since 1927, has been to be faithful to their claim “BEING FIRST”, as an attitude of constant improvement with the sole aim of elaborating the best wine. Protos, true to its roots and keeping up with an ever evolving industry, builds a new state of the art winery in 2008 in Peñafiel. Blending together the know how of their long history with the new technologies that help them continue to make better and more sustainable wines.

Product notes

The soils for Protos Verdejo Cuvée are mainly composed of sand and clay, providing good drainage and promoting slow, balanced ripening of the grapes. This composition contributes to the freshness and liveliness characteristic of this organic wine.

Production notes

The grapes are hand-harvested early in the morning to ensure maximum freshness. After careful sorting, they are gently pressed to extract the juice. Fermentation takes place in stainless steel tanks at controlled temperatures, preserving the fresh and fruity aromas of the Verdejo. During fermentation, the wine is closely monitored to maintain optimal temperature and enhance flavor extraction. Once fermentation is complete, the wine rests on fine lees to develop roundness and complexity before being filtered and bottled.

Tasting notes

This organic Verdejo shows a pale yellow color with greenish highlights, bright and clear. The nose is expressive, offering aromas of citrus, green apple, exotic fruits, and subtle herbal notes. On the palate, it is fresh, lively, and well-balanced, with a pleasant aromatic persistence. Serve between 8 and 10 °C. Perfect as an aperitif or paired with grilled fish, seafood, fresh salads, and vegetarian dishes.
