About this winery

Champagne is rich in its extreme diversity ... Plots and vintages are so many terroirs with unique personalities. For a House, building a vineyard is like choosing the origin of its colors very carefully for a painter ... The House was set up working from grapes grown by the same families of winegrowers since its founding. At the same time, she patiently chose her own plots. Because for Bruno Paillard, it is not a question of dominating a village, but of tirelessly seeking the different...

Product notes

Cuvée 72 draws its richness from the diversity of Champagne terroirs, with a rigorous selection of more than 30 crus mainly spread across the Premiers and Grands Crus of the Montagne de Reims, the Côte des Blancs, and the Vallée de la Marne. Each parcel is carefully cultivated, respecting natural balances, to best express the uniqueness of its soil—whether chalky, clay-limestone, or sandy. This mosaic of terroirs brings finesse, structure, and depth to the blend, revealing the full complexity of Champagne in an exceptional wine.

Production notes

Bruno Paillard's Cuvée 72 Champagne takes its name from the 72 months of maturation it undergoes, 36 months on the lees, followed by an additional 36 months after disgorgement. It is a variation of the Première Cuvée, offering greater aromatic complexity thanks to these extra three years of ageing. Crafted from more than 30 crus, Cuvée 72 blends a solera of reserve wines with a recent harvest. It is made exclusively from the first pressings of the three traditional Champagne grape varieties: Chardonnay, Pinot Noir, and Meunier.

Tasting notes

Cuvée 72 stands out with its exceptionally fine bubbles. On the nose, it reveals delicate aromas of citrus and white flowers, which evolve with aeration into subtle spicy notes. The palate is both lively and enveloping, echoing the aromas of the nose and adding hints of dark fruits and dried fruits. The finish is remarkably pure and elegantly long. Serve between 8 and 10 °C. This cuvée pairs beautifully with refined dishes such as scallop carpaccio, porcini mushroom risotto, or truffle-roasted poultry.
