The history of the De Bortoli family is one of determination and triumph that begins at the beginning of the precedent century in a Europe in the middle of a world war, and the story is now known across Australia, several generations later. Product notes
The terroir of De Bortoli's Chill No Chill is located in the Yarra Valley, a region with a cool climate and moderate altitudes. The soils are mainly composed of decomposed basalt and granite, well-drained and rich in minerals. This geographical context promotes a slow ripening of the grapes, allowing for good natural acidity and a precise aromatic expression.
Production notes
The vinification of De Bortoli's Chill No Chill follows a minimalist approach aimed at preserving freshness and fruit purity. The Pinot Noir and Syrah grapes are harvested early to retain acidity, then vinified separately. A portion of the fermentation is done with whole bunches to add structure and floral aromas. Fermentation takes place in stainless steel tanks using indigenous yeasts, with no oak influence, in order to maintain the wine’s purity. The wine is then blended, lightly filtered, and bottled young for early consumption.

Chilled ~10–14°C: When this wine is chilled, you'll discover a fresh, smooth, spicy, and soft red. Not chilled ~18–20°C: When not chilled, this wine becomes spectacularly aromatic—thoughtful, calm, so seductive and expressive. Deeply perfumed, with violets and red fruits—a pure delight.
