Product notes
Comes from well-drained clay-limestone soils, offering mineral-rich ground that promotes aromatic concentration. The region’s temperate climate provides ideal temperature variations, allowing slow and balanced ripening of the grapes, preserving freshness and finesse.
Production notes
To achieve a fresh and crisp style, selected yeasts were used. Some parcels undergo lees stirring (bâtonnage) to add body and presence on the palate.
Tasting notes
Deakin Estate Chardonnay is best served chilled, between 10 and 12°C, to fully reveal its aromas. On the nose, it offers delicate notes of apple, pear, white peach, soft citrus, and floral hints, with a subtle vanilla oakiness. On the palate, it is round and smooth, balancing freshness and fruitiness, with an elegant and sometimes slightly mineral finish. This wine pairs perfectly with seafood, grilled fish, poultry in creamy sauces, and mild cheeses.
