Product notes
The vines are grown at altitudes between 500 and 700 meters in the Sierra de Algairén, within the Cariñena Protected Designation of Origin (D.O.P.). The soil is sandy-limestone, with a high presence of stones on the surface, promoting natural drainage and high aromatic concentration. The vines, aged between 25 and 50 years, are cultivated using the traditional gobelet (bush vine) method, which limits yields and enhances quality.
Production notes
The grapes come from old Cariñena vines planted at high altitude on sandy-limestone soils. Harvesting is done by hand to preserve the integrity of the berries and allow for careful selection. Before fermentation, a cold pre-fermentation maceration is carried out for a few days to gently extract color and aromas. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, in order to retain the fruit purity and varietal expression of the grape. After fermentation, the wine is aged for 10 months in a combination of French and American oak barrels, which brings structure, complexity, and subtle toasted and spicy notes. The wine is then bottle-aged for several months before release, allowing it to harmonize and achieve balance.
Tasting notes
Anayón Cariñena displays a deep cherry red color with garnet highlights. The nose is expressive and complex, offering aromas of blackberry, blackcurrant, and dark plum, followed by sweet spices, vanilla, cocoa, and gently toasted oak. On the palate, the wine is powerful, full-bodied, and well-structured, with ripe, silky tannins. The natural freshness of the Cariñena grape balances the richness of the fruit, adding vibrancy and length. The finish is persistent, with mineral and slightly balsamic touches. The ideal serving temperature is between 16 and 18 °C. It is recommended to aerate or decant the wine for 20 to 30 minutes before serving to fully enjoy its aromatic complexity.
