Product notes

The grapes come from vines aged 27 to 48 years, grown using the goblet training method on sandy and stony soils located between 590 and 680 meters in altitude. This terroir provides optimal natural drainage and promotes good aromatic concentration. The goblet training helps limit yields and improves the quality of the grapes. Aging at high altitude contributes to a slow and balanced maturation, which is essential to produce a rich and elegant wine.

Production notes

The Garnacha grapes (sometimes blended with a touch of Tempranillo) are hand-harvested to preserve their quality. After a rigorous sorting, a cold pre-fermentation maceration is carried out to gently extract aromas and color. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, followed by an extended maceration to extract structure and tannins. The wine is then aged for about 12 months in French and American oak barrels, which adds aromatic complexity, roundness, and elegant tannins. After aging, the lots are blended and the wine rests in the bottle before release to refine its maturity.

Tasting notes

The wine displays a deep ruby red color with captivating violet reflections. On the nose, it unfolds intense and enticing aromas of ripe black cherries and wild blackberries, accompanied by delicate notes of vanilla and chestnuts that add aromatic complexity. On the palate, this warm wine charms with its smooth and mature tannins, offering rich flavors of black cherries highlighted by elegant hints of cedar and tobacco leaves. It expresses itself fully when served at an ideal temperature between 16 and 18 °C, ensuring a balanced and harmonious tasting experience. This wine pairs perfectly with grilled pork chops, truffle risotto, sautéed mushrooms, grilled or roasted red meats, and aged cheeses, making every meal a refined gastronomic experience.
