Product notes
The grapes come from vines cultivated using the goblet training method, a traditional pruning technique that promotes harmonious plant growth. These vines thrive on sandy and rocky soils, providing a well-drained and mineral-rich terroir conducive to the development of complex aromas. Located at an altitude between 590 and 680 meters, these plots benefit from a cool climate and significant temperature variation, ideal conditions for the slow and steady ripening of the grapes, thus ensuring optimal fruit quality.
Production notes
The grapes are hand-harvested and carefully placed in perforated crates to preserve the quality of the fruit. The winemaking process begins with a cold pre-fermentation maceration at 6 °C for 5 to 6 days, allowing the extraction of delicate aromas while maintaining freshness. This phase is followed by a long post-fermentation maceration lasting 25 to 30 days, with frequent pump-overs and délestage (rack-and-return) to optimize the extraction of tannins and color. The wine is then aged exclusively in stainless steel tanks, with no oak aging, to preserve its aromatic freshness and pure fruit character. After fermentation, the wine is blended before bottling, allowing additional rest for perfect balance. Bottling is done with a screw cap, ensuring easy opening and optimal freshness retention. Oxygen contact is strictly minimized throughout the process to best preserve the wine’s aromas and liveliness.
Tasting notes
The wine displays a bright cherry red color with violet highlights, reflecting its youth and freshness. The nose is intense and expressive, featuring fresh red fruit aromas such as strawberry and cherry, complemented by delicate floral notes and a subtle touch of spice that adds complexity. On the palate, it is light, lively, and fruity, with a refreshing acidity that balances supple tannins, offering a pleasant sensation of freshness. The alcohol content is 11%, and although the residual sugar level is not specified, the wine is best served between 14 and 16 °C to fully reveal its aromas. It has a drinking window of 2 to 3 years after the vintage, during which its fruity qualities are at their peak. This wine pairs perfectly with a wide variety of light and flavorful dishes, including assorted tapas such as olives, cured meats, and cheeses, lightly grilled meats like chicken or pork, pasta with tomato sauces, composed salads, as well as light Asian cuisine such as sushi and sashimi.
