Product notes

The old vines of Cariñena (over 30 years old), grown using the gobelet method on clay-limestone soils at 400-700 meters altitude, benefit from a continental Mediterranean climate with significant temperature variations. This terroir promotes slow ripening and optimal aromatic concentration, producing a powerful, structured, and expressive wine typical of this Aragon region.

Production notes

Vendanges manuelles au début octobre. Les raisins sont ensuite foulés et complètement égrappés. Vinification à température contrôlée, avec remontages et délestages. Seul le vin de goutte est utilisé. Fermentation malolactique. Élevage quatre mois en barriques de chêne français.

Tasting notes

Deep ruby color. Intense nose, smoky and spicy with aromas of thyme, paprika, and clove. Fruity notes of blackberry and cherry hide beneath the dominant aromas. It is medium-bodied and offers intense flavors of raspberry and cinnamon. Ideal pairing with smoked sausages, ratatouille, spicy chicken or pork dishes, and Indian cuisine. Serving temperature: 15 to 17 °C.
