The grapes are picked between mid-August and the end of September, depending on altitude and weather conditions. In accordance with tradition, heating is a major factor in aging, giving Madeira wine its unique taste and characteristics, as well as the unparalleled longevity for which it is famous.
Production notes
Manual harvest. At the cellars grapes are weighed, destemmed and pressed. Fermentation 2-3 days. Addition of vinous alcohol at 96% once the desired density is reached. The wine rests for about 3 months and is fortified at 17º. Vacuum filtration. Wine is placed in the “estufa” and heated at 45º C for 3 months. Slow cooling to room temperature, resting period of about 3 months. The wine ages 5 years in oak casks before being bottled.
Tasting notes
The aging in oak resulted in an intensely concentrated and rich wine, with a strong flavor of ripe fruit, raisins and caramel. Ideal after dinner or served iced as an aperitif. It is perfect with nuts, strong cheeses, dark chocolate and rich desserts. Serve at room temperature. Wine does not deteriorate once the bottle is opened.
