About this winery

The Burrier family, present for more than 5 centuries. It constitutes one of the major domains of the South of Burgundy with the 43 hectares of vineyards of Château Beauregard, Domaines Joseph Burrier and Georges Burrier, including 22 from Pouilly-Fuisé, 7 from Saint-Véran and 12 from Fleurie, Moulin-à- vent, Morgon, Saint-Amour, and Chiroubles. Since 2012, Domaine Château du Clos has been operated as a monopoly by Maison Joseph Burrier.

Product notes

La Croix Pardon comes from varied terroirs, ranging from the pure limestone of the "Cras" on the Beauregard plateau to the deeper, clayey soils in the lower part of the Solutré-Pouilly commune. This diversity allows for a rich and complex expression of Chardonnay. The viticulture is conducted with respect for the environment, promoting biodiversity and the natural balance of the vineyard.

Production notes

The grapes are harvested at optimal ripeness, then gently pressed to extract compounds favorable for aging. The juices are then clarified by gravity at 15 °C for 24 hours. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, followed by aging on fine lees for 10 to 12 months, without malolactic fermentation, in order to preserve the wine’s freshness and minerality.

Tasting notes

This wine shows a pale yellow color with silvery reflections. On the nose, it reveals fresh and elegant aromas of lemon, verbena, and linden, enhanced by a mineral and slightly minty touch. On the palate, the attack is lively and balanced, with a round and rich texture, saline notes, and a long, clean finish. Over time, this wine evolves towards complex aromas of honey, toasted bread, and orange peel. It is best served between 12 and 14 °C to fully reveal its finesse. This Pouilly-Fuissé pairs perfectly with grilled or papillote-cooked fish, creamy poultry dishes, white meats, goat cheeses, as well as shellfish and crustacean dishes.
