Product notes

The appellation is based on two north-south slopes. "Quintaine" is undoubtedly one of its most renowned climats. The shallow soils (about 40 cm deep), composed of decomposed limestone (Oxfordian marls) mixed with clay, lie directly on the limestone bedrock.

Production notes

Sustainable viticulture. Manual harvesting at optimal ripeness. Sorting on a vibrating table. The grapes are mechanically pressed, then undergo rigorous settling for 24–36 hours. The entire batch ferments and is aged for one year in Burgundy barrels, with 20% in new barrels and the rest in older barrels. The vinification is very slow and gentle, promoting the expression of this superb terroir.

Tasting notes

The wine shows a bright gold-green color. On the nose, it reveals delicate and subtle aromas of flowers, white fruits, and toasted bread. On the palate, it is dense, full-bodied, and well-balanced, with a beautiful persistent finish. It is ideally served between 11 and 13 °C to better reveal its aromas and freshness. This wine pairs perfectly with seafood such as oysters and shellfish, grilled or sauced fish, roasted or creamy poultry, as well as fresh or aged goat cheeses. It also complements light vegetable dishes or composed salads very well.
