Product notes

The vineyard is located in Burgundy, a region renowned for its mineral-rich clay-limestone soils that contribute finesse and complexity to the wines. The temperate climate, with moderately warm summers and cool nights, promotes a slow and steady ripening of the grapes, thereby preserving freshness and balance. The hillside vineyard exposure ensures good sunlight and optimal drainage, enhancing the quality of the grapes.

Production notes

The Pinot Noir grapes are hand-harvested at full maturity to preserve their optimal quality. After rigorous sorting, the clusters are destemmed and gently crushed to release the juice while limiting excessive tannin extraction. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature, typically between 25 and 28 °C, in order to preserve the fresh and fruity aromas of the grape variety. A relatively short maceration is carried out, lasting between 10 and 15 days, with regular pump-overs to extract color, delicate tannins, and aromatic complexity without harshness. After malolactic fermentation, the wine is racked and primarily aged in stainless steel tanks, without oak barrel aging, to maintain freshness and aromatic purity. The aging process usually lasts several months before bottling, which is done with a natural cork stopper that allows slight micro-oxygenation beneficial for the harmonious evolution of the wine. This production method aims to create a balanced, fresh, and elegant wine, true to the character of Pinot Noir and the Burgundy terroir.

Tasting notes

The wine is best served at an ideal temperature between 16 and 18 °C, which allows the full aromatic finesse of the Pinot Noir and its balance on the palate to be revealed. It is poured into a tulip-shaped glass with a wide opening, facilitating the release of subtle aromas of red fruits, violet, and woody spices. Visually, the wine shows a clear, bright ruby red color, reflecting its youth and freshness. On the nose, delicate aromas of raspberry and cherry are noticeable, along with floral and herbal notes, and a slight hint of spice. On the palate, the attack is smooth, followed by fine and well-integrated tannins. The lively acidity balances the structure, bringing freshness and length to the finish. The fruity and spicy flavors persist pleasantly. This wine pairs perfectly with grilled or roasted white meats, fine charcuterie, mushroom-based dishes, as well as soft cheeses. It also goes well with roasted or sautéed vegetables, highlighting its freshness and finesse.
