In 1970, Aimé Guibert ventured into the hinterland of the Hérault region in search of a unique terroir and fell under the spell of an old farmhouse and its ancestral mill. Owned by the Daumas family, the estate is nestled in a magnificent valley crossed by the Gassac River. This historic site, notably marked by the Moulin de Gassac — a former water mill and a witness to the region’s agricultural past — became the birthplace of Mas de Daumas Gassac. Product notes
Soil and terroir: Very strict choice of vines and poor terroirs with a strong personality. Limestone slopes dating from the Jurassic period located between 150 and 300 m altitude for Syrah, limestone sandstone slopes and Rognacian marl for Merlot. Average age of the vines: Between 20 and 30 years.
Production notes
Mechanical harvest, over two days. Typical vinification of the Médoc; de-stemming, slow maceration at a temperature varying between 28 ° C and 33 ° C. Lack of filtration can lead to a light deposit. Partial aging, between eight to nine months in barrels of one to three wines.
Tasting notes
Velvet red, brown reflections. Elegant and melted notes of jammy fruit. Fineness of coffee and spices. Soft, charming and velvety tannins on the palate, toasted notes. Balanced finish, good persistence on the fruit. A round and fine wine. Perfect pairing with tapenade, tabbouleh, melon skewers with country ham, veal blanquette, charolais steak and pan-fried foie gras, rack of pork lacquered with honey and coriander, and lamb shank tagine with mirabelles.
