About this winery

In 1970, Aimé Guibert ventured into the hinterland of the Hérault region in search of a unique terroir and fell under the spell of an old farmhouse and its ancestral mill. Owned by the Daumas family, the estate is nestled in a magnificent valley crossed by the Gassac River. Product notes

The Moulin de Gassac Élise draws its character from a very strict selection of vines planted on poor soils with strong personality. The Syrah thrives on Jurassic limestone hillsides located between 150 and 300 meters altitude, providing freshness and minerality. The Merlot, meanwhile, expresses itself on sandstone limestone and Rognacian marl slopes, lending richness and structure to the wine. The vines, averaging 20 to 30 years old, benefit from deep rooting that promotes optimal ripening and great aromatic complexity. This careful parcel selection, combined with controlled yields, ensures a wine that is balanced, powerful, and true to the identity of the Pays d’Hérault terroir.

Production notes

The grapes are harvested mechanically over two days. The vinification, typical of the Médoc, includes destemming followed by a slow maceration at a controlled temperature between 28°C and 33°C. The absence of filtration may result in a slight natural deposit. Aging is partial, lasting eight to nine months in oak barrels, most of which are one to three years old, to provide structure and complexity to the wine.

Tasting notes

Velvety red with brown highlights. Elegant and harmonious notes of jammy fruit. Delicate hints of coffee and spices. The palate features soft, charming, and smooth tannins with toasted notes. The finish is balanced with good persistence of fruit. A round and refined wine. Perfect pairing with tapenade, tabbouleh, melon and country ham, veal blanquette, seared foie gras, and honey-coriander pork loin. Serve at 18 to 20°C.
