In 1970, Aimé Guibert ventured into the hinterland of the Hérault region in search of a unique terroir and fell under the spell of an old farmhouse and its ancestral mill. Owned by the Daumas family, the estate is nestled in a magnificent valley crossed by the Gassac River. This historic site, notably marked by the Moulin de Gassac — a former water mill and a witness to the region’s agricultural past — became the birthplace of Mas de Daumas Gassac. Rich clay-limestone plateau.
Production notes
Harvest 50% by hand, 50% by machine. Harvest at the beginning of September Traditional vinification with daily pumping over, 10 days maceration and aging in stainless steel vats for 80% and 20% in barrels.
Tasting notes
Light and elegant red color with pretty brick reflections. Complex and fine nose, typical of Pinot Noir: candied cherry, light roasted and mocha notes. Light and greedy on the palate, carried by the fruit. Very nice freshness and supple tannins make this a balanced and fine Pinot Noir. Perfect pairings for a tangy salad, cold cuts, meats, smoked salmon steak, light cheeses. Serving temperature: 14 to 16 ° C.
