Product notes
The Chenin Blanc vines thrive in poor, well-drained alluvial soils located at a high altitude in the Mendoza Valley. The climate is dry, with significant temperature variations between day and night, promoting slow ripening and naturally high acidity.
Production notes
The grape harvest is carried out traditionally at the beginning of February, mainly during the coolest hours of the day in order to preserve the aromatic freshness of the grapes. Fermentation takes place in stainless steel tanks at a controlled temperature (between 13 and 16 °C), with no oak aging, to retain the purest expression of the grape variety. No barrel aging is practiced, in order to favor a clean, fresh, and crisp profile. The wine is lightly filtered before bottling.
Tasting notes
This Chenin Blanc displays a pale yellow color with silvery highlights. The nose is delicate, marked by floral aromas (chamomile), fruity notes (green apple, white peach, citrus), and mineral hints (flint, slate). On the palate, the attack is lively, with pronounced acidity, a light texture, and a refreshing finish. Dry, unoaked, and finely chiseled, it offers an immediately enjoyable profile, ideal as an aperitif or paired with seafood, delicate fish, appetizer bites, summer salads, lightly spiced dishes, or mild, firm cheeses.
