Production notes
Manual harvest at the best time. The grapes are then destemmed, crushed and vinified with careful maceration to extract color, tannins and aromas. Fermentation in stone tanks at a temperature ranging from 28˚ C to 30˚ C, with permanent pumping over. When the desired balm is reached, the wine is mutated by the addition of brandy. Aging in barrels for variable periods, but never less than seven years, and bottled as market demand.
Tasting notes
Brilliant brown color. Intense and elegant bouquet from which aromas of red fruits emerge. On the palate, it is well structured, full and solid with firm but balanced tannins. Served slightly chilled, it asserts all its finesse as an accompaniment to caramel desserts. It goes well with medium-intensity cheeses. Despite its age, its freshness is preserved. The range of possible harmonies is astounding, leaving the consumer the pleasure of searching for new flavors. Serving temperature: 12˚C to 14˚C
