Product notes

This wine comes from the hills of the Classica zone of Valpolicella, specifically from Sant’Ambrogio di Valpolicella. The vines, aged between 10 and 15 years, are grown at an altitude of 250 to 300 meters, with southeast and southwest exposures. The soil is mainly clay-limestone, rich in rocky fragments, ensuring excellent drainage and contributing to the wine’s minerality. The planting density is 5,000 vines per hectare, and the vines are pruned using the Guyot method.

Production notes

Manual harvest in October. Destemming followed by maceration for 10 to 12 days. After alcoholic fermentation, the wine undergoes gentle pressing and is then stored in stainless steel tanks until January. At this stage, the Valpolicella is passed over the Amarone pomace for a period of 7–8 days. It is then aged for 18 months in oak barrels and a few additional months in bottles, under controlled temperature conditions.

Tasting notes

The Zenato Ripassa Valpolicella Superiore DOC displays a deep red color with violet highlights. On the nose, it charms with notes of ripe black cherry, plum, black pepper, and a hint of delicate leather. On the palate, it reveals beautiful complexity with velvety tannins, balanced freshness, and a long, spicy finish reminiscent of licorice. Served between 16 and 18 °C, this wine pairs wonderfully with duck breast accompanied by red fruits.
