Product notes

The Cabernet Franc comes from vineyards located at altitude (around 1100–1200 meters), on poor, well-drained soils, often calcareous and silty, typical of the Uco Valley. The climate is continental and dry, with significant temperature variations between day and night, promoting slow ripening and aromatic concentration.

Production notes

The grapes are hand-harvested to preserve their integrity. Fermentation is carried out with native yeasts, allowing the natural expression of the terroir to be respected. A prolonged maceration is performed to extract the structure and deep aromas of the Cabernet Franc. Finally, the wine is aged in French oak barrels, mainly in 225-liter barrels, for 10 to 12 months, bringing complexity and finesse without masking the freshness and fruit.

Tasting notes

The wine shows a deep ruby color with violet highlights. The nose is intense and complex, with aromas of ripe red fruits such as raspberry and cherry, accompanied by typical Cabernet Franc vegetal notes like green bell pepper and fresh herbs, along with spicy hints of black pepper and licorice. On the palate, it is elegant, supported by silky tannins and a bright acidity that brings freshness and balance. The finish is long, slightly spicy, and mineral. It is ideally served between 16 and 18 °C (61–64 °F) and pairs perfectly with dishes such as duck breast, grilled pork chop, ratatouille, or aged cheeses like sheep’s cheese or Comté.
