About this winery

The Domaine du Vieux Château d´Astros is located in the heart of the Côtes de Provence. The commandery built in the 12th century by the Templars was occupied by its builders and then by the Order of Saint John of Jerusalem, known as the Knights of Malta. During the Revolution, the estate was sold. Since 1802, the Old Castle of Astros has been the property of the Maurel family. Product notes

Soils on slopes, stony, limestone and dry, allowing to obtain grapes with powerful and complex aromas.

Production notes

Mechanical harvest. The harvest begins during the night (4h AM) for better control of picking temperatures to best preserve the aromas. The macerations are carried out directly in the presses, avoiding a return trip to the vats, limiting oxidation phenomena. After the skin maceration, it is decupted and then a moderate pressing is carried out. After cold settling, alcoholic fermentation is carried out at 18 ° C for 20 days. Aging is then carried out in vats for 3-4 months before marketing.

Tasting notes

Beautiful, very pale pink color. The nose is elegant with citrus and mineral notes. The complex, elegant and concentrated palate develops fresh notes of lemon and exotic fruits. To drink as an aperitif or with appetizers, salads, fish, seafood and smoked salmon.
