About this winery
The family winery Boisseaux-Estivant was founded in the late 19th century. It was then acquired by the Ponnelle family, a family which owns a wine trading company in the commune of Beaune. The activities of the trading company began in the 1870s, under the leadership of Pierre-Lazarre Ponnelle. His son Albert later decides to found his own house. Age of vines: 25 years
Production notes
Harvest: Manual. Vinification: Destemming of 80% of the harvest. 20 days average fermentation. Aging: Forty percent of the crop is aged in barrels and the rest in stainless steel tanks, for a minimum of 10 months. Slight filtration before bottling.
Tasting notes
Ruby color of medium intensity. Fine nose that opens with subtle cherry notes. Pleasant freshness on the palate. With supple tannins. Food pairing: cheeses, red meats and grilled meats.
