Production notes

Harvest the second half of August. Vinification according to the so-called “submerged hat” method, carefully controlled in order to extract the delicate tannins and varietal characteristics. Maceration of 12 to 15 days at a controlled temperature not exceeding 25 ° C. The hot and dry climate of the Puglia region offers an ideal condition for the grapes. Aging: The tannins and varietal characteristics reach their pinnacle during aging in steel vats, wooden vats and bottles.

Tasting notes

Intense purple color, which evolves towards amber with age. It is a very robust wine thanks to its high alcohol and the balance between its soft tannins and its acidity. Fruity, with notes of plum, marmalade, cherry and tobacco. Spicy, there are flavors of chocolate, coffee and vanilla on the finish. It is great with grilled or roasted meats. Ideal with game. Excellent with mature firm cheeses. Serving temperature: 18 to 20 ° C.
