About this winery
The name of Domaine des Sarrins derives from the word "Sarrasins". In the 11th century, a Saracen chief killed in a raid was buried there, according to local legend. Located in the Var, near Lorgues, the vineyard covers 25 hectares in the hills of the village of Saint-Antonin-du-Var. Since its acquisition in 1995, the vineyard has been cultivated organically: no weedkiller, but plowing and natural pest control methods.

Product notes
Triassic (Tertiary) subsoil, essentially made up of gravel limestones with some clayey areas. Altitude between 150 and 180 meters, which allows a good thermal amplitude. The weather conditions of the vintage were particularly difficult. After an early bud break, two nights of frost in mid-April affected the vines. An extremely dry summer reduced yields even further, resulting in an overall crop loss of 60%. Despite these conditions, the vines were able to find their resources thanks to deep rooting.
Production notes
Harvest at the end of August. Vinification by direct, slow and delicate pressing. The yield is limited to 60%, to obtain a shade of a very light brilliant pink. Inerting the juices at each stage to prevent oxidation and protect the delicate aromas, reducing sulfur doses to a strict minimum. Vinification in stainless steel vats at moderate temperature then use of cold to avoid malolactic transformation.
Tasting notes
Very pale pink color, brilliant and limpid. The nose is fine and delicate and presents aromas of white fruits with citrus notes and floral nuances. On the palate, the attack is full-bodied. We find the delicacy of the nose, fresh and harmonious and its floral aromas, as well as a beautiful substance. Nice length on the finish. A gourmet rosé that accompanies a carpaccio, an oriental salad, as well as dishes with a Mediterranean flavor.
