Product notes
Soils of sandy clay loam mixed with pebbles, at an altitude ranging from 600 to 800 meters. Continental climate with cold winters and very hot summers.
Production notes
Harvested by hand, during the morning hours. The grapes are destemmed and crushed. Fermentation lasts seven to ten days and is carried out in temperature-controlled stainless steel tanks. Ten to fifteen days post-fermentation maceration. Malolactic fermentation. Aging 6 months in barrels: American and French oak for the tempranillo, American oak for the other grape varieties. The wine settles naturally during this passage in barrels. Then come 18 months of aging in the bottle.
Tasting notes
Intense ruby color with garnet reflections. Nose with notes of blueberries, raspberries, cloves and smoke. Supple and well-balanced wine with flavors of raspberry and crushed red pepper seeds on the palate. Accompanied by herb-crusted pork tenderloin, bacon quiche or Mexican cuisine.
