Freixenet is ideally located in the Penedès region, southwest of Barcelona, ​​recognized as the land of Cava. Production notes

Chardonnay and pinot noir are harvested mechanically at night to preserve the freshness of the grapes. The macabeu and the parellada are harvested by hand during the day. - Each grape variety is pressed and vinified separately. In the case of chardonnay, the press is pneumatic and programmed to extract between 55 and 65% of the juice. For macabeu and parellada, only drop wine is used. Finally, in the case of pinot noir, a variable proportion of press wine is mixed with drop wine. From there, the wort is transferred by gravity into a decantation tank to separate it from its solids before fermentation using specially selected yeasts, in stainless steel tanks, at a controlled temperature ranging from 16 to 18 ° C. - Aging at least 18 months in bottle.

Tasting notes

Clear and bright straw yellow color with green reflections. Fine and persistent bubbles which form permanent rosaries and a light crown. Elegant and pleasant nose of acacia flowers and honey, on a frame of ripe fruit (pineapple, peach and pippin). The palate is supple and inviting on attack, opening onto the same fruit, with crisp acidity that leads to a long, balanced finish.
