Production notes
Mechanical harvest. Traditional Burgundy vinification: bringing the grapes to the place of vinification, flexible pressing to obtain the best juices. Settling after addition of clarifying enzymes, alcoholic fermentation in clear juice. Settling of the large lees, filling the storage tanks then malolactic fermentation during the winter. Racking, aging in stainless steel vats for 8 months then bottling.

Stéphane Aviron's Macon Villages displays a richness and depth that are the hallmarks of the traditional methods of this cellar. Weeks of fermentation give the wine its richness in flavors of fresh cut hay, white flowers and pears with hints of citrus acidity that shine through.
